Kale! We’ve all heard of the vegetable – in fact, it would seem kale is all any health guru/ health food lover is talking about these days.
So what is it about this super food that is so super?
Apart of the cabbage family (which includes broccoli and cauliflower), kale is packed with vitamins and minerals. Kale is a strong source of Vitamin C – in fact, it contains even more Vitamin C then an orange!
Kale is also high in Vitamin E – an antioxidant that protects, repairs and nourishes your skin from the inside out. Kale is also a solid source of calcium, protein and folate (instrumental for brain development).
Kale is also great for the heart! Helping to lower cholesterol therefore reducing the risk of heart disease.
Some tips for cooking with Kale?
Make sure to cook kale well as it contains goitrogens, which can mess with the thyroid. Also, kale is part of what I call ‘the dirty dozen’, meaning veggies that are the most sprayed! Make sure to wash thoroughly before cooking with Kale
