Lunch wraps are affordable, quick to prepare and they are also delicious! They make a regular appearance in the JS kitchen and our team are always whipping up new combos.
Confused as to which wrap to buy? Wholemeal Lebanese bread and mountain bread wraps are our faves. If you struggle with gluten, opt for coconut wraps or a gluten-free wrap of choice.
Here are 3 of our favourite lunch wraps:
Mediterranean Lunch Wrap (pictured above)
We are excited to share one of our most loved JSHealth app recipes, our Mediterranean Lunch Wrap!
- 1 tbsp pesto – try our Walnut Pesto
- 2 boiled eggs
- sea salt
- black pepper
- 1 wrap of choice
- 1 tomato, sliced
- 2 tbsp goat’s cheese
- large handful baby spinach
Using a fork, mash the pesto and boiled eggs in a small bowl. Season to taste.
To assemble your wrap, spread the pesto egg mix down the centre of the wrap, leaving room at each end for folding. Place the sliced tomato, goat’s cheese and baby spinach leaves on top.
Tightly roll up your wrap, folding up the ends so the ingredients don’t fall out. Slice in half and enjoy!
Leftover Veggie Wrap
Next time you roast up a tray of veggies, save some extras for a lunch wrap! One of our favourites combos in the JSHealth office is:
- Leftover roasted eggplant, zucchini and capsicum
- Plus some legumes of choice for some protein. Black beans, cannellini beans and lentils are some of our faves! Tinned varieties are absolutely fine, just make sure to rinse them thoroughly.
Creamy Tuna Wrap (pictured above!)
