Whipped Feta with Roasted Cherry Tomatoes

Vibrant and wonderfully rich, this elevated dip is my go-to for effortless entertaining. Made with jammy roasted cherry tomatoes and fragrant basil, it’s a nourishing dish that feels both simple and satisfying.

Time to make: 30 minutes

Serves: 4–6

Ingredients:

  • 200g feta cheese
  • 100g ricotta cheese
  • 1–2 tbsp olive oil (plus extra for drizzling)
  • 1 garlic clove, minced (optional)
  • 250g cherry tomatoes, on the vine if possible
  • Salt and freshly cracked black pepper
  • Squeeze of lemon juice (optional)

Method:

Preheat the oven to 350°F/180°C. Drizzle cherry tomatoes with olive oil, season with salt and pepper, and roast for 15–20 minutes until soft and slightly caramelized.

In a blender or with a hand mixer, combine feta, ricotta, olive oil, and garlic. Blend until smooth and creamy (be careful not to overwhip). Taste and adjust seasoning; add a squeeze of lemon if desired.

Spread whipped feta mixture on a serving dish. Top with roasted cherry tomatoes. Drizzle with extra olive oil.

Tahini Dip with Cucumber & Onion Tabbouli

Smooth, zesty tahini forms the base, topped with a crunchy tabbouli that brings cooling cucumber, fresh parsley, and a hint of lemon. It’s quick, nutritious, and perfect for easy entertaining. Serve with soft pita or crisp veggie sticks for a feel-good dish that’s as exceptional as it is easy to make.

Time to make: 10 minutes

Serves: 6–8

Ingredients:

Tahini Dip:

  • 1 cup tahini
  • Juice of 2–3 lemons (adjust to taste)
  • 4 garlic cloves, minced or grated
  • ½–¾ cup water (or as needed to reach a smooth, creamy consistency)
  • ½ tsp salt (adjust to taste)

Tabouli Topping:

  • 1 medium cucumber, diced small
  • ½ small red onion, finely diced
  • ½ cup fresh parsley, chopped
  • 1–2 tbsp olive oil (optional)
  • Squeeze of lemon (optional)
  • Pinch of salt (optional)

Method:

Begin by making the tahini. In a large bowl, combine tahini, lemon juice, garlic, and salt. Whisk in water gradually, 1–2 tablespoons at a time, until smooth and pourable but still thick enough to hold toppings. Taste and adjust seasoning; add more lemon juice or salt if desired.

Then make the tabouli topping. In a bowl, combine cucumber, onion, and parsley. Drizzle lightly with olive oil and a squeeze of lemon if desired. Season with a pinch of salt and toss gently.

Spread the tahini dip in a large serving dish. Spoon the cucumber and onion tabbouli over the top. Optional: drizzle with a little extra olive oil or sprinkle a pinch of paprika for color. Serve with pita, flatbread, or fresh vegetables for dipping.

Harissa-Infused Tzatziki

Spicy, smooth, and totally irresistible! This dip combines the cooling creaminess of Greek yogurt with the smoky heat of harissa. A touch of garlic, lemon, and olive oil brings freshness, while optional add-ins like honey, cumin, or tahini let you customize the flavor. Serve it chilled as a bold dip for veggies, warm pita, or roasted meats.

Time to make: 10 minutes

Serves: 4–6

Ingredients:

  • 1 cup Greek yogurt (thick)
  • 1–2 tbsp harissa paste (adjust to heat preference)
  • 1 small garlic clove, minced or grated
  • Juice of ½ lemon (or to taste)
  • 1 tbsp olive oil
  • Pinch of salt

Method:

In a bowl, whisk together the Greek yogurt, harissa paste, garlic, lemon juice, olive oil, and salt. Taste and adjust — more harissa for heat, if you like. Drizzle with a little olive oil, or chopped herbs before serving.

Optional: Refrigerate for 20–30 minutes to let the flavors develop.
