Elevating the humble chicken salad to new heights, this version stars chicken nestled amongst wholesome textures and flavors. Think crunchy celery, sweet cranberries, aromatic herbs, zesty lemon and rich walnuts. For a vegetarian version, boiled eggs or chickpeas work just as well!
Whether you enjoy it with dippers like crackers and carrot sticks, or spread it on a wrap or sandwich, this versatile mix is sure to become a lunchtime favorite.

Ingredients:
- 200g (7oz) cooked chicken, finely chopped, we used poached chicken
- 2 spring onion, finely chopped
- 1 stalk celery, chopped
- 2 tbsp walnuts, chopped, omit for nut-free
- 1 tbsp cranberries, chopped
- 150g (5.3oz) Greek yoghurt
- 1 tbsp Dijon mustard
- 2 tbsp chopped herbs, we used mint
- 1 lemon, juiced & zested
To serve:
- 1 carrot, in sticks
- 1 cup mixed berries
- 12 crackers of choice
- 2 squares dark chocolate, optional
Method:
To make the chicken mix, combine all of the ingredients in a mixing bowl. Season to taste with sea salt and black pepper.
Divide the chicken mix between two lunch boxes. Add in the remaining ingredients in separate sections and keep stored in the refrigerator for up to three days.
