Mixed Crostini Platter

A delightful selection of sweet and savory; our balanced platter offers protein, healthy fats, and antioxidants. Golden crostini are topped with creamy ricotta, fresh berries, and crunchy pistachios, or rich goat’s cheese with smoked salmon and fresh dill. Perfect for sharing or entertaining!

Makes: 20 crostini

Ingredients:

Crostinis:

  • 1 baguette, cut into 20 slices
  • Olive oil spray

Sweet Ricotta, Berries & Pistachio (10 crostini):

  • ⅓–½ cup ricotta
  • Honey, to drizzle
  • ½ cup strawberries, halved
  • Fresh mint, thinly sliced

Smoked Salmon, Labneh & Pickled Shallot (10 crostini):

  • 120–150g goat’s cheese
  • 80–100g smoked salmon
  • Fresh dill, to garnish

Method:

Preheat the oven to 390°F/200°C, on a grill setting. Place baguette slices on a baking tray, spray lightly with olive oil. Bake for 15 minutes, or until golden and crisp. Remove and let cool slightly.

Assemble the sweet ricotta crostini. Spread a thin layer of ricotta on each crostini. Top with 2–3 strawberry halves per crostini. Drizzle with honey and sprinkle with mint.

Assemble the smoked salmon crostini. Spread goat’s cheese on each crostini. Top with smoked salmon. Finish with fresh dill.

Serve immediately, as a mixed platter for a vibrant sweet and savory crostini spread.
