Prawn Rolls with Lime

Fresh, zesty, and utterly satisfying! These rolls are packed with vibrant flavor and texture. Juicy prawns are tossed with crisp cucumber, fresh chives, and a light yogurt-mayo dressing for a creamy, glossy finish. Nestled in golden, toasted brioche with a crunch of lettuce and a squeeze of lime, they’re a simple and joyful bite.

Serves: 6

Ingredients:

For the filling:

  • 220g king prawns, cooked and peeled
  • 2 spring onion greens, finely sliced
  • ½ cup diced cucumber 
  • 2 tbsp chopped chives
  • 2 tbsp whole-egg mayonnaise
  • 2 tbsp thick Greek yogurt
  • Salt to taste

To serve:

  • 6 brioche rolls
  • Butter (for toasting the rolls)
  • 6 mini gem lettuce or shredded cos
  • Lime wedges

Method:

Slice prawns into hearty chunks. In a bowl, mix prawns with cucumber, spring onions, chives, mayo, yogurt, and salt. Give it a gentle toss so the yogurt keeps everything glossy, not mushy. Taste and adjust seasoning.

Trim sides of brioche if needed. Lightly butter a pan and toast the rolls until golden and crisp edges form.

Add a lettuce leaf to line each roll. Spoon in that creamy prawn mixture. Drizzle lime juice and serve.
