Chickpea and Chicken Patties

My sweet client, Samantha, shared this delicious, simple recipe that requires just 2 steps – one of which is turning on your food processor! Try serving them alongside steamed vegetables or atop fresh greens, and save any leftovers for a quick, savoury lunch!

Ingredients

Serves: 4
  • 400g can of chickpeas, drained and pulsed in the Vitamix
  • 500g chicken mince
  • 1 red onion, chopped
  • 2 egg whites
  • 1 tsp minced garlic
  • 2 tbs spices of choice (I used Herbies satay spice mix)
  • 1 tbs coconut oil

 

Method

  1. Combine all ingredients in a bowl except coconut oil.
  2. Heat coconut oil in a pan and then spoon mixture into medium sized patties. Pan fry for 3-4 minutes on each side. Makes 8 patties.
