Chocolate & Tahini Brownies

Almost everyone knows that I’m a sucker for tahini and when it’s paired with chocolate, I simply can’t resist. These brownies are nutritious, wholesome and you’re going to fall in love with the recipe, just as I did!

Ingredients

  • 1 cup walnuts
  • 1 cup medjool dates, pitted
  • 1 tsp cinnamon
  • pinch of celtic sea salt
  • 1/4 cup desiccated coconut
  • 1/2 tsp vanilla powder
  • 5 tbsp raw cacao powder (reserve 1 tbsp for icing)
  • 2 tbsp coconut oil, melted
  • 2 tbsp raw maple syrup or honey
  • 1/4 cup hulled tahini
  • few drops of filtered water

 

Method

  1. In a food processor, grind the walnuts to a fine crumb.
  2. Add the dates, cacao, cinnamon, salt, vanilla and coconut and process until sticky.
  3. Line a small square dish or loaf tine with baking paper. Press the mixture in firmly.
  4. To make the icing, place the coconut oil, honey, tahini and 1 tbsp cacao into a food processor. Process until it forms a smooth texture. If the mix is too thick add a few drops of water.
  5. Spread the mix over the brownie tin with a spatula. Sprinkle more cinnamon.
  6. Put into the fridge for 30mins to set.
  7. Serve with a dollop of yoghurt or coconut ice-cream. Top with crushed berries.
