Raw Chocolate & Caramel Shortbread

Obsessed with Hannah and her delicious creations for Health Synergy! This is one of my fave recipes – which Hannah has so generously shared (you can read her Day on a Plate here too!). Perfect with a cup of my Ayurveda Hot Chocolate or a Chai Tea as a little afternoon indulgence.

Ingredients

Makes: 15

Base

  • 1/2 cup buckinis, ground to a flour
  • 1/4 cup cashews, ground to a flour
  • 1/4 cup desiccated coconut
  • 2 tbsp coconut paste, melted
  • 1 tbsp coconut nectar
  • 2-3 tbsp boiling water*
  • 1/4 tsp Himalayan salt

If the mixture looks a little dry, add a touch more water and/or coconut paste

Caramel

  • 1 cup medjool dates (soak in warm water for a few minutes to soften)
  • 3/4 cup macadamias or cashews
  • 1/4 cup coconut paste, melted
  • 1 tsp vanilla bean paste
  • 1 tbsp hulled tahini
  • 1/4 tsp Himalayan salt
  • 3 tbsp boiling water
  • 1 tbsp mesquite powder, optional

Chocolate

  • 200 grams dark chocolate, melted (we use Loving Earth 85%)

 

Method

  1.  Combine ground buckinis, ground cashews and desiccated coconut in a large mixing bowl
  2. Then add remaining ingredients for the base and mix until the mixture starts to stick together*
  3. Press the base into a greased and lined square or rectangular baking tray and place in the fridge while you make the caramel layer
  4. Combine all caramel ingredients in a high power blender (we use a vitamix) and blend until smooth
  5. Scoop the caramel on top of the base, spreading evenly
  6. Place in the freezer for 1-2 hours or until firm
  7. Using a sharp knife, slice into  approx. 15 even pieces
  8. Melt the chocolate using a double saucepan and then transfer to a shallow bowl
  9. Allow the chocolate to cool slightly and then dip each individual caramel shortbread into the chocolate until fully covered
  10. Place a sheet of baking paper on a plate to transfer the chocolate covered bars
  11. Place in the fridge for 10-20 minutes to set, then serve and enjoy.
