Nutella Brownie Cake

A Valentine Treat – Healthy nutella brownie cake

A delicious dessert to enjoy on Valentines Day. Exactly what I will be enjoying with my loved one. Add a scoop of delicious coyo ice-cream.
  • 1 1/2 cup hazelnuts – leave some for your topping if you wish
  • 1 1/2 cup medjool dates (pitted)
  • 1 tsp. cinnamon
  • Pinch of sea salt
  • 1/4 cup desiccated coconut
  • 4 tbsp. raw cacao powder
  • 2 tbsp. tahini (hulled)
  • 2 tbsp. rice malt syrup
  • 1/4-1/2 cup water
  1. Grind hazelnuts to a fine crumb in food processor.
  2. Add dates, 3tbsp cacao, salt, cinnamon and coconut and process until sticky. Add the water until its firm enough to set into tin.
  3. Line mixture into a small square/round baking dish (can use use a loaf tin) with baking paper.
  4. Press mixture into tin firmly.
  5. Next step….
  6. Place tahini, rice malt and 1tbsp cacao into food processor.
  7. Pulse until a smooth consistency.
  8. If the mix is too thick add a few drops of water.
  9. Spread the mix over the brownie in tin with a spatula.
  10. Sprinkle more cinnamon!
  11. Put into the fridge/freezer for at least 30min
  12. Serve with a dollop of yoghurt/coconut ice cream + crushed berries ( I blend frozen berries in food processor).
  13. If you wish- pulse some more hazelnuts in the food processor to use as a crumble topping.
