Apple Pastry Scrolls

Roll into the festive season with our delicious take on the viral Apple Pastry Scrolls! Buttery, flaky pastry spirals around tart green apples laced with sweet cinnamon and a hint of maple syrup. Finish off with a dusting of icing sugar for a touch of festive magic that’s guaranteed to be a hit with your guests. Our tip: pop your apple slices into the microwave for 60 seconds to ensure a melt-in-your-mouth experience.

Ingredients:

  • 1 green apple, sliced into thin moons  
  • 1 tsp cinnamon, or cinnamon sugar 
  • 1 tbsp maple syrup 
  • ¼ tsp vanilla extract 
  • ½ lemon
  • 2 sheets puff pastry, defrosted 
  • 1 egg, whisked 
  • Icing sugar to serve 

Method:

Preheat the oven to 180ºC or 350ºF. Line a baking tray with baking paper. 

Place the apples in a mixing bowl. Add the cinnamon, maple, vanilla and a small squeeze of lemon juice. Toss to combine, cover and leave to sit for 10 minutes.*

Use a pizza cutter or knife to slice your pastry into 5 long segments. Lightly dust a lined tray or silicone baking mat with flour. Place your first pastry strip onto the floured tray. Line up a few apple pieces onto the pastry, leaving room on the bottom edge so that the pastry can be folded over. Ideally, a little of the apple should sit above the pastry so that it is visible when rolled up. 

Roll up the pastry into a scroll and place on the prepared baking tray. Repeat with the remaining pastry and pieces.**

Once all of your scrolls are made, use a pastry brush to glaze the scrolls with an egg wash. If the ends of the scrolls aren’t sticking, use some egg to seal the scrolls. Top each scroll with some additional cinnamon sugar. 

Place in the oven to bake for 30 minutes or until golden brown. 

Remove from the oven and dust with icing sugar to serve. 

Notes: 

*If you prefer, you can also microwave your apples for 1 minute to soften them slightly. 

**We defrosted our frozen pastry and then kept it in the fridge until ready to cut and roll.
