Berry, Banana & Almond Chia Pudding

I’ve said it once and I’ll say it again: Breakfast really is the most important meal of the day. I love eating a fresh, fibre-filled meal first thing in the morning, which is why I’m loving my berry, banana and almond chia pudding. Chia seeds are a great source of omega-3 fatty acids, iron and fibre, which keep you fuller for longer, while almonds are rich in protein and magnesium. Together, these ingredients deliver a powerhouse of nutrients. Pro tip: this is also a great mid-afternoon or pre-workout protein snack.

Ingredients

Serves: 1

  • 3 tbsp chia seeds
  • 1 cup almond milk
  • ½ tsp cinnamon
  • ½ banana, mashed
  • 1 scoop vanilla protein powder
  • ¼ cup almonds
  • Handful almonds
  • Handful fresh raspberries
  • Handful fresh blueberries

To serve:

  • Handful fresh raspberries
  • Handful fresh blueberries
  • Handful almonds

 

Method

  1. Place the chia seeds and almond milk in a bowl and stir to combine.
  2. Add the rest of the ingredients and stir well.
  3. Place in the fridge to set for 10 minutes.
  4. When the pudding has set, top it with a handful of fresh raspberries, blueberries and almonds.
