I’ve said it once and I’ll say it again: Breakfast really is the most important meal of the day. I love eating a fresh, fibre-filled meal first thing in the morning, which is why I’m loving my berry, banana and almond chia pudding. Chia seeds are a great source of omega-3 fatty acids, iron and fibre, which keep you fuller for longer, while almonds are rich in protein and magnesium. Together, these ingredients deliver a powerhouse of nutrients. Pro tip: this is also a great mid-afternoon or pre-workout protein snack.
Ingredients
Serves: 1
- 3 tbsp chia seeds
- 1 cup almond milk
- ½ tsp cinnamon
- ½ banana, mashed
- 1 scoop vanilla protein powder
- ¼ cup almonds
- Handful almonds
- Handful fresh raspberries
- Handful fresh blueberries
To serve:
- Handful fresh raspberries
- Handful fresh blueberries
- Handful almonds
Method
- Place the chia seeds and almond milk in a bowl and stir to combine.
- Add the rest of the ingredients and stir well.
- Place in the fridge to set for 10 minutes.
- When the pudding has set, top it with a handful of fresh raspberries, blueberries and almonds.
