Broccoli and Egg Breakfast Wrap

Breaky wrap !! Need a wheat wrap alternative?

This is so easy to make.


  • 2 beaten eggs ( or 3 egg whites)
  • 1/2 steamed broccoli
  • 1/2 cup spinach leaves
  • 1 Tbsp. psyllium husk
  • 1 Tbsp. LSA mix ( to bulk it up)
  • 1/2 tsp baking powder
  • 1 Tbsp almond milk
  • Himalayan salt
  • Pepper
  • 1/2 lemon


Crush the broccoli and spinach in your food processor until it reaches a smooth texture.

Mix together in a bowl with the other ingredients.

Fry in coconut oil like an open omelette.

Flip it both sides to cook. Leave flat to cool.

I smeared mine with homemade pesto, tomatoes, rocket, avocado, lemon, left over Brussels!  Add a drizzle of lemon.

You can add anything you wish.

    Hey Jess, I need your help. So I’m off to college this fall and I’m worried about the food. Dining halls don’t really float my boat when it comes down health and taste. My residence hall has a kitchen and I intend to use it, but my dad says if I waste my meal plan he won’t be happy. I don’t know what to do, if I had it my way I’d make all my meals myself. I don’t want to upset my dad, but as a dietetics/nutrition student, health is really very important to me. I’m stuck. Any advice? On another note, you are fabulous and incredibly inspiring! Thanks so much for all that you do.

    Hi, I found this very hard to make. My mixture was very thick and impossible to flip. I think it needed more milk? it was nothing like an omelette or a wrap.

    • Hi Candice!
      Try adding a little more almond milk next time if your mixture it too thick! It should be a centimetre or two in width in the pan, and like an open omelette when you finish. Enjoy!
