Carrot Cake Smoothie

Dessert for breakfast….WHY NOT! My favourite childhood dessert was creamy carrot cake! My best!

I love being able to create healthy versions of the textures and flavours that I so adore and that my body craves! This is why healthy food can be so much fun. You can recreate the traditional versions of recipes in healthier ways!

Oh and I love carrots!!! Carrots are full of beta carotene which is a potent antioxidant and great for the liver!

P.S: I love to eat my smoothies with a teaspoon, try it – it lasts longer!

Ingredients

  • 1/2 grated carrot
  • 2 tbsp natural Greek yogurt
  • 1-2 tbsp ricotta cheese
  • 1/4 cup walnuts
  • 1 serving vanilla protein powder or alternatively LSA mix or 1 egg
  • 1/2 tsp nutmeg
  • tsp cinnamon
  • 1 tbsp chia seeds
  • 1-2 tsp stevia/honey/maple syrup
  • 1 tsp vanilla bean powder ( if you have)
  • 1 cup almond milk
  • handful ice cubes

 

Method

  1. Place all the ingredients into a blender ( I use the Hamilton Beach brand)
  2. Top each glass with bits of ricotta, grated carrot, walnuts and cinnamon.
