Curried Cauliflower

My favourite side-dish at the moment! Make a big batch of this for your next dinner party, or alternatively you can toss it through a salad to add texture and flavour.

Ingredients

Serves: 4, as a side

  • 1 cauliflower head, cut into florets
  • 1 tsp curry Madra spice
  • 1 tsp cumin spice
  • 1/2 tsp turmeric
  • Olive oil and rock salt, for roasting

 

Method

  1. Preheat oven to 180°C.
  2. Add the cut cauliflower to a baking tray and sprinkle over spices.
  3. Drizzle with olive oil and rock salt. Toss it together with your hands.
  4. Roast in the oven on for 20-25 minutes, until golden and deliciously spicy!
