Egg White Crepes with Protein Icing

Dessert for breakfast…This is so  much fun!

 

Nutritionally perfect: Sugar-free, high protein, blood sugar stabilisation, gluten free!

Ingredients:

  • 2 egg whites
  • 1 Tbsp. Greek yoghurt
  • pinch on nutmeg
  • 1 tsp. cinnamon
  • 1/2 tsp. vanilla
Icing:
  • 1 tbsp. vanilla protein powder
  • 1 tbsp. Greek yoghurt
  • 1/2 tsp. cinnamon

Method:

For Crepes:

Combine egg whites, yoghurt, nutmeg, cinnamon and vanilla in a bowl and mix well.

Spray a non stick pan and cook for 1-2 mins on each side.

Flip it on either side so it looks like a crepe.

For icing:

Mix the yoghurt, protein powder, cinnamon and maple syrup together with 1 tbsp. almond milk/water so its a nice and creamy texture.

Pour the icing onto crepes evenly.

I top my crepes with homemade granola or 3 crushed walnuts. For some extra indulgence- I pour a little maple syrup too!
