Egg White Crepes with Protein Icing

Dessert for breakfast? How could I say no? Sugar-free, high protein, blood sugar friendly and gluten free!

Ingredients

Serves: 1

For the crepes:

  • 2 egg whites
  • 1 Tbsp. Greek yoghurt
  • pinch of nutmeg
  • 1 tsp. cinnamon
  • 1/2 tsp. vanilla
For the icing:
  • 1 tbsp. vanilla protein powder
  • 1 tbsp. Greek yoghurt
  • 1/2 tsp. cinnamon

 

Method

For the crepes:

  1. Combine egg whites, yoghurt, nutmeg, cinnamon and vanilla in a bowl and mix well.
  2. Spray a non stick pan and cook for 1-2 mins on each side.
  3. Flip it on either side so it looks like a crepe.

For the icing:

  1. Mix the yoghurt, protein powder, cinnamon and maple syrup together with 1 tbsp. almond milk/water so its a nice and creamy texture.
  2. Pour the icing onto crepes evenly.

I top my crepes with homemade granola or a few crushed walnuts. For some extra indulgence, I pour a little maple syrup too!
