Dessert for breakfast? How could I say no? Sugar-free, high protein, blood sugar friendly and gluten free!
Ingredients

For the crepes:
- 2 egg whites
- 1 Tbsp. Greek yoghurt
- pinch of nutmeg
- 1 tsp. cinnamon
- 1/2 tsp. vanilla
For the icing:
- 1 tbsp. vanilla protein powder
- 1 tbsp. Greek yoghurt
- 1/2 tsp. cinnamon
Method
For the crepes:
- Combine egg whites, yoghurt, nutmeg, cinnamon and vanilla in a bowl and mix well.
- Spray a non stick pan and cook for 1-2 mins on each side.
- Flip it on either side so it looks like a crepe.
For the icing:
- Mix the yoghurt, protein powder, cinnamon and maple syrup together with 1 tbsp. almond milk/water so its a nice and creamy texture.
- Pour the icing onto crepes evenly.
I top my crepes with homemade granola or a few crushed walnuts. For some extra indulgence, I pour a little maple syrup too!
