French Toast With Maple Strawberries

French toast purchased from a café is often sugar-laden and not overly nutritious. This version of French toast tastes just as decadent but is sweetened with only a touch of maple syrup and delicious berries!

Note: It’s delicious with sourdough, rye, wholegrain or gluten-free breads!

Serves: 2

Ingredients

  • 3 egg, whisked
  • ½ tsp cinnamon
  • 4 slice bread of choice
  • 4 tsp organic butter, or olive/coconut oil for dairy free
  • ½ cup (110g) strawberries, sliced
  • 2 tsp maple syrup

To serve

  • 1 tbsp almond butter
  • ¼ cup (40g) blueberries

Method

  1. Crack the eggs in a shallow bowl. Add in the cinnamon and whisk well to combine.
  2. Soak 1 piece of bread in the egg mix, turning to ensure both sides are covered.
  3. Whilst the bread is soaking, heat 1 tsp butter in a non-stick frying pan over a medium heat.
  4. Remove the bread from the egg mix and transfer to the frying pan. Fry on each side for 2-3 minutes or until golden. Remove from the pan and transfer to a plate.
  5. Repeat this process with the remaining pieces of bread.
  6. Once all the French toast has been made, add the sliced strawberries to the same pan. Pour over the maple syrup and stir with a wooden spoon to coat while the strawberries cook gently for 1-2 minutes.
  7. Divide the French toast between two serving plates and top with the maple strawberries, a dollop of almond butter and a sprinkle of blueberries, if using.
