Making your own baked beans is incredibly simple and requires minimal preparation. This recipe from the JSHealth app makes enough for two but can easily be doubled to allow for leftovers.

Making your own baked beans is incredibly simple and requires minimal preparation. This recipe makes enough for two but can easily be doubled to allow for leftovers.

Ingredients

Serves: 2

  • 1 tbsp extra virgin olive oil
  • ½ brown onion, diced
  • 1 garlic clove, crushed
  • 2 tsp sweet paprika
  • 1 tin cannellini beans, drained and rinsed
  • 1 tin tomatoes
  • 2 tsp balsamic vinegar
  • sea salt and pepper, to taste

To serve:

  • large handful rocket leaves
  • ½ avocado, sliced
  • 2 slices toast of choice

 

Methods

  1. Heat the olive oil in a non-stick frying pan over a medium high heat. Add the brown onion and garlic and sauté for 3-4 minutes or until softened.
  2. Add the remaining ingredients and season with sea salt and pepper. Bring to the boil and then reduce the heat to a simmer. Simmer gently, stirring intermittently for 10 minutes or until the tomatoes have reduced slightly.
  3. Serve the beans on top of your choice of toast and with a side of rocket and sliced avocado.
