Making your own baked beans is incredibly simple and requires minimal preparation. This recipe makes enough for two but can easily be doubled to allow for leftovers.
- 1 tbsp extra virgin olive oil
- ½ brown onion, diced
- 1 garlic clove, crushed
- 2 tsp sweet paprika
- 1 tin cannellini beans, drained and rinsed
- 1 tin tomatoes
- 2 tsp balsamic vinegar
- sea salt and pepper, to taste
- large handful rocket leaves
- ½ avocado, sliced
- 2 slices toast of choice
Heat the olive oil in a non-stick frying pan over a medium high heat. Add the brown onion and garlic and sauté for 3-4 minutes or until softened.
Add the remaining ingredients and season with sea salt and pepper. Bring to the boil and then reduce the heat to a simmer. Simmer gently, stirring intermittently for 10 minutes or until the tomatoes have reduced slightly.
Serve the beans on top of your choice of toast and with a side of rocket and sliced avocado.
