This recipe is too easy! Plus it’s high in vitamin C and K, a powerful antioxidant and a great source of fibre.

Serves: 4, as a side

  • 1 bunch of kale
  • 1 tbsp. Coconut oil/olive oil or coconut oil spray
  • Himalayan salt and pepper
  • spices of choice – turmeric, mixed spices, cajun, cumin etc.

  1. Preheat oven to 200 degrees Celsius.
  2. Cut out the stem of the kale leaf and rip the leaves up into pieces.
  3. Spray them with olive oil/melted coconut oil. Mix together with your hands.
  4. Sprinkle himalayan salt, pepper and spices of choice.
  5. Evenly spread over baking tray.
  6. Bake it in the oven for about 12-15 minutes.
