Melting Choc Chip Cookies

Very excited to be sharing a recipe from the gorgeous Sophie Fisher of @coconutandbliss for Valentine’s Day. You can find more recipes from Sophie at www.coconutandbliss.com

This would have to be one of my favourite dessert recipes… so indulgent and the perfect treat.

Ingredients

  • 1/3 cup almond butter (heaped)
  • 1 cup almond meal
  • 1 tsp mesquite (optional)
  • 1 tsp organic vanilla extract
  • 1/4 cup coconut sugar
  • 1 organic, free range egg (or flax egg, if you’re vegan)
  • 100g quality dark chocolate, chopped.
  • 1/2 tsp sea salt

 

Method

  1. Preheat the oven to 150 degrees Celsius, fan-forced.
  2. In a bowl, place all ingredients except the chocolate and stir until a dough forms.
  3. Add a dash of water if too dry.
  4. Stir in the chocolate.
  5. Spoon onto a tray lined with baking paper.
  6. Form into a large circular shape and flatten.
  7. Bake for about 15-20 minutes. (Bake for longer for a crispy consistency).
  8. Cut into slices and serve.
