One Pan Halloumi & Mediterranean Veggies

This nourishing vegetarian One Pan dish will transport your tastebuds to the Greek Islands!  Melt-in-your mouth halloumi pairs perfectly with a medley of Mediterranean vegetables, finished with balsamic and served with creamy hummus. Option to pair with wholemeal pita bread.

Serves: 2

Ingredients

  • ½ eggplant, cubed
  • 3 Roma tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 3 sprigs rosemary, leaves finely chopped
  • 15 Brussels sprouts, halved
  • 1 red onion, peeled & sliced into wedges
  • 1 ½ tbsp balsamic vinegar
  • 200g (7oz) halloumi, sliced

To serve                                                            

  • ½ lemon, in wedges
  • 3 tbsp hummus

 

Method

  1. Preheat the oven to 180°C or 360°F. Line a baking tray with baking paper.
  2. Place the eggplant and halved tomatoes on the tray. Drizzle with half of the extra virgin olive oil, half of the rosemary, and season generously with sea salt and pepper. Place in the pre-heated oven to bake for 10 minutes.
  3. After 10 minutes, remove the tray from the oven and add the halved Brussels and red onion. Drizzle the remaining extra virgin olive oil over the top. Season with sea salt and black pepper. Spoon the balsamic vinegar over the top of the tomatoes and red onion. Return the tray to the oven and bake for a further 20 minutes.
  4.  Remove the tray from the oven and change the oven setting to grill. Place the halloumi slices on top of the veggies. Top the halloumi with a small drizzle of olive oil and season with pepper. Place the tray under the grill for 10-12 minutes or until the halloumi is golden. 
  5. Serve with fresh lemon wedges and hummus.
