Ingredients:
For the filling:
- 220g king prawns, cooked and peeled
- 2 spring onion greens, finely sliced
- ½ cup diced cucumber
- 2 tbsp chopped chives
- 2 tbsp whole-egg mayonnaise
- 2 tbsp thick Greek yogurt
- Salt to taste
To serve:
- 6 brioche rolls
- Butter (for toasting the rolls)
- 6 mini gem lettuce or shredded cos
- Lime wedges
Method:
Slice prawns into hearty chunks. In a bowl, mix prawns with cucumber, spring onions, chives, mayo, yogurt, and salt. Give it a gentle toss so the yogurt keeps everything glossy, not mushy. Taste and adjust seasoning.
Trim sides of brioche if needed. Lightly butter a pan and toast the rolls until golden and crisp edges form.
Add a lettuce leaf to line each roll. Spoon in that creamy prawn mixture. Drizzle lime juice and serve.
