Shaved Brussels Sprouts and Caramelised Onion Salad

Brussels sprouts are one of the best foods to support our liver. This dish is such a crowd favourite at dinner parties!

Ingredients

  • 600-900g brussels sprouts – about 3 punnets
  • 1 lemon – zest
  • 1/2 cup almonds – crushed
  • 1 tsp salt
  • 2 red onions
  • 1 tbsp coconut oil/olive oil
  • 1 tbsp olive oil
  • 1 tsp chilli flakes

 

Method

  1. Steam brussels – until soft but not soggy (al dante)
  2. fry red onions in 1tbsp coconut oil on a high heat pan
  3. crush almonds in food processor
  4. add fried onions to a bowl of the steamed brussels
  5. mix through olive oil, salt, chilli and lemon zest
  6. top with crushed almonds
