Craving a sweet snack for one? This classic apple crumble is delicious, nourishing, and comes together in a flash! The crunchy coconut and oats make for the perfect satiating breakfast option paired with Greek yogurt for an added dose of protein – or, if you have dessert on your mind, enjoy the sweet apples and nutty topping served warm with a scoop of ice cream!
Serves: 1, Time to cook: 20
Ingredients:
1 small apple, chopped into small pieces
2 tsp lemon juice
1-2 tbsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon
3 tbsp rolled oats
2 tbsp chopped macadamias or pecans
1 tbsp desiccated coconut
1 tbsp melted butter, or coconut oil for dairy-free
To serve:
2 tbsp Greek yogurt, or coconut yogurt for dairy-free
Method:
Combine all of the ingredients in a mixing bowl and stir to combine.
Press into a large oven proof ramekin or glass container. Alternatively you can divide between two smaller ramekins.
Air-fry at 150C or 300F for 10 minutes. Remove and stir so that the top doesn’t burn and the oats are evenly toasted. Air-fry for a further 10 minutes. Note: if you don’t have an air-fryer you can bake in the oven following the same steps.
Serve topped with Greek yogurt.
