Delicious warming side that goes so well with chicken/lamb/fish/lentils. Yum! Full of nutrients and antioxidants.
Ingredients
- 2 large orange sweet potatoes, peeled and cut into small cubes
- 1/3 cup milk of choice
- 1 tbsp organic butter or cold-pressed extra-virgin olive oil
- 1 tbsp ground cinnamon + extra (to serve)
- Himalayan salt and ground pepper
Method
- Place the sweet potatoes in a large saucepan, add enough water to cover and bring to the boil
- Reduce the heat to medium, cover and simmer for 10-12 minutes or until the sweet potatoes are tender. Or you can steam them.
- When the sweet potatoes are soft and tender, drain and return to the saucepan. Add the milk, butter or olive oil, cinnamon, salt and pepper and mash together using either a potato masher or stick blender. Serve sprinkled with a little extra cinnamon.
