On-the-go breakfasts

On the weekends I love to cook up a big breakfast spread or make a batch of yummy pancakes, but on weekdays this isn’t always an option.

To make sure I’m not compromising on taste or nutrition, I instead prep some portable breakfast options. I turn to things that I can either whip up the night before and keep stored in the fridge or something that takes less than 5 minutes to throw together and pack with me.

Life is busy (particularly at this time of year!) but breakfast is truly so important. Here are 3 on-the-go breakfast options I adore:

5-Ingredient Egg Muffins

Eggs are truly so nutritious and make for a great protein packed breakfast. I make a batch of these muffins on a Sunday and enjoy 2 or 3 for breakfast. Find the recipe here.

2-Step Vanilla Chia Pudding

Chia puddings are so easy to prepare. Simply mix 3 tbsp chia seeds with 1 cup of your milk of choice. Then add in extra flavours e.g. fruit, nuts, seeds, cinnamon. The options are endless! The full recipe for my favourite vanilla chia pudding can be found on the app.

AM Energiser Smoothie

When made correctly, smoothies can be a filling and balanced breakfast option. The trick with smoothies is to include a protein source along with some healthy fats. If we only use fruit in our smoothies and skimp on the other macronutrients, we simply won’t be satisfied. My current favourite smoothie is my AM Energiser, find the full recipe on the app.
