The trend might be over, but I still love this simple recipe. This is a balanced option for busy days, packed with high-quality protein for steady energy. Crisp tortilla edges, fluffy eggs, and flavorful veggies in every bite — so yum!

Time to cook: 25 minutes 

Serves: 2

Ingredients:⁠

  • 1 wholemeal wrap or tortilla⁠
  • 4 eggs⁠
  • 2 heaped tbsp cottage cheese⁠
  • 5 cherry tomatoes, halved⁠
  • 4 button mushrooms, sliced⁠
  • Sprinkle of sliced olives⁠
  • Chopped rosemary, or herbs of choice⁠
  • Sea salt & pepper⁠
  • Parmesan cheese⁠

Method:⁠

Preheat the oven to 200°C or 395°F.⁠

Place a wholemeal wrap in shallow cake tin or baking dish.⁠

Add in the eggs and cottage cheese, season with sea salt, black pepper, and chopped rosemary. Whisk until combined.⁠

Add in the sliced mushrooms, cherry tomatoes, and a sprinkle of olives. Finish with parmesan cheese and bake in the preheated oven for 20 minutes.⁠

Slice and serve!⁠
