Ingredients:
- 1 wholemeal wrap or tortilla
- 4 eggs
- 2 heaped tbsp cottage cheese
- 5 cherry tomatoes, halved
- 4 button mushrooms, sliced
- Sprinkle of sliced olives
- Chopped rosemary, or herbs of choice
- Sea salt & pepper
- Parmesan cheese
Method:
Preheat the oven to 200°C or 395°F.
Place a wholemeal wrap in shallow cake tin or baking dish.
Add in the eggs and cottage cheese, season with sea salt, black pepper, and chopped rosemary. Whisk until combined.
Add in the sliced mushrooms, cherry tomatoes, and a sprinkle of olives. Finish with parmesan cheese and bake in the preheated oven for 20 minutes.
Slice and serve!
