Choc Nutty Paleo Muffins

These muffins are divine! Not to mention they are so easy to quickly whip up to satisfy those cravings.

Ingredients

Serving size suggestion: 2- You can double the ingredients to make a bigger batch of course.

  • 1 ripe banana mashed
  • 1 tsp. stevia powder
  • 2 tbsp almond butter
  • 1 egg- beaten
  • 1 tsp cinnamon
  • Pinch of nutmeg (optional)
  • 2-3 tbsp. cacao powder
  • 1/2 tsp. baking powder

 

Method

  1. Mix the above ingredients together in a bowl. Place mixture in a small bowl or muffin tin. (Leave some mixture behind to use as icing).
  2. Bake in the oven for about 15 minutes on 180°C.
  3. Once cooked- I smear left over mixture as icing, 1 tsp. almond butter and a few goji berries. Crushed nuts would work well too!
