Healthy Chickpea & Chicken Patty Recipe
My sweet client, Samantha, shared this delicious, simple recipe that requires just 2 steps – one of which is turning on your food processor! Try serving them alongside steamed vegetables or atop fresh greens, and save any leftovers for a quick, savoury lunch!
- 400g can of chickpeas, drained and pulsed in the Vitamix
- 500g chicken mince
- 1 red onion, chopped
- 2 egg whites
- 1 tsp minced garlic
- 2 tbs spices of choice (I used Herbies satay spice mix)
- 1 tbs coconut oil
- Combine all ingredients in a bowl except coconut oil.
- Heat coconut oil in a pan and then spoon mixture into medium sized patties. Pan fry for 3-4 minutes on each side. Makes 8 patties.
