This creamy protein pudding takes minutes to prep, making it an easy addition to your fridge for busy mornings. Packed with fiber from chia seeds and medjool dates, it’s a nourishing way to start your day.

Ingredients:
- 3 (60g) Medjool dates, pitted
- ½ cup (120g) Greek yogurt
- ¾ cup (135ml) milk, we used almond
- 1 tbsp (15g) JSHealth Vitamins Choc Brownie Protein Powder*
- 2 tsp cacao powder
- ½ tsp vanilla
- ¼ cup (45g) chia seeds
To serve:
- Berries of choice
- Peanut butter, optional
Method:
Combine all of the ingredients except the chia seeds in a high-powered blender. Add a pinch of sea salt and blend. Note: if your Medjool dates are dry, soak in hot water for 5 minutes first to soften.
Pour into a container, or two containers for single servings, and stir in the chia seeds. Whisk until well combined.
Place in the fridge to set for a minimum of 3 hours.
Remove from the fridge. If your pudding looks a little thick, add 1-2 tbsp additional milk and whisk until incorporated.
Serve topped with berries and a drizzle of peanut butter.
Any leftovers can be stored in the fridge for up to 4 days.
