Coconut and Almond Slice

Oh, do I have a treat for you! These are truly the healthiest “candy bars” you can imagine – raw, gluten-free, and full of healthy fats and antioxidants. I adapted them from the recipe of a colleague at the clinic – had to recreate them! Topped with chocolate or not, they are the perfect snack to have on hand when you need something that tastes naughty but is actually nothing but nice.

  • 1 cup shredded unsweetened coconut
  • 2 cups raw almonds
  • 1/2 cup almond butter
  • 2/3 cup coconut oil
  • 1 Tbsp. coconut flour
  • 1 1/2 Tbsp. maple syrup
  • 1 Tbsp. vanilla extract
  • 2 oz. 85% dark chocolate

 

Method

  1. Melt coconut oil in a small saucepan over low heat.
  2. Line a 9×9” baking pan with wax paper.
  3. Pulse almonds in food processor until they resemble coarse sand. Add remaining ingredients except chocolate. Pulse until a textured paste forms (bits of almond and coconut shouldn’t be too small). Stir to incorporate evenly.
  4. Pour into baking pan and smooth out to corners. Refrigerate until set, at least 1 hour.
  5. Melt chocolate in a double boiler. Drizzle over almond coconut base and spread with a spatula to evenly coat. Place bars back in refrigerator for approximately 5 minutes. Chocolate should be solid but still a little soft for ease of cutting. Slice into bars and store in the refrigerator.
