Coconut Lemon Protein Balls

I’m loving this delish recipe from my darling client Melissa and had to share! You can prep them any time and refrigerate them so that you always have a quick, healthy snack on the go.

Coconut Lemon Protein Balls

Ingredients
  • 1 cup almond meal
  • 2 cups organic desiccated coconut (plus extra for rolling)
  • 3 Tbsp. coconut butter
  • 2 Tbsp. lucuma powder
  • 1 Tbsp. chia seeds
  • 1 tsp. vanilla powder
  • Zest of 1 lemon
  • 1 Tbsp. lemon juice
  • 1 Tbsp. stevia
  • 1 scoop NuZest vanilla protein powder
Instructions
  1. Blend all ingredients in the food processor, adding a bit of warm water to bind mixture as needed.
  2. Roll into balls, then roll in extra coconut.
  3. Will keep in the refrigerator for about a week.
