Folate is the natural form of vitamin B9 found in foods, which plays an important role in healthy growth and development. If you’re on your own pregnancy journey, it’s an especially key nutrient for women in the prenatal and in-natal period, so load up!
Not sure where to start when it comes to adding more folate into your diet? I’ve done the homework for you and put together this delicious meal incorporating foods naturally rich in folate to get you started.
Here’s what’s in it…
- Kale massaged in a maple citrus dressing
- Cooked quinoa
- Pan-fried asparagus
- Orange slices
- Sliced radishes & cucumber
- Sliced avocado
- Boiled eggs
- Sunflower seed & pumpkin seeds
- Toasted almonds
To assemble, first toss the kale with maple citrus dressing. Then, layer on cooked quinoa, pan-fried asparagus, orange slices, sliced radishes and cucumber, sliced avocado and boiled eggs. Top with sunflower seeds, pumpkin seeds and toasted almonds.
Not only is this bowl rich in folate-containing foods, it is also beautifully balanced and most importantly, SO delicious! I hope you enjoy every bite.
