Sesame, Leek & Chilli Mushrooms with Asparagus

A new favourite side that I made recently! So easy and pairs so well with mains 🙂

 

Sesame & Leek Chilli Mushrooms and Asparagus

 

Serves: 2

 

Ingredients:

  • 2 leeks, chopped thinly
  • 2 tbsp coconut or olive oil
  • 1 cup mushrooms, chopped
  • 1 cup asparagus, chopped
  • 1 tsp sea salt
  • 1 tbsp sesame seeds
  • 1 tsp chilli (optional)

 

Method:

  1. Heat 1 tbsp olive or coconut oil in a non-stick fry pan on medium heat.
  2. Sauté chopped leeks until they start to brown.
  3. Add chopped mushrooms and asparagus. Drizzle with extra 1 tbsp of oil, sea salt, sesame seeds and chilli. Continue to sauté for 3-4 minutes until cooked.
