A new favourite side that I made recently! So easy and pairs so well with mains.
Ingredients
Serves: 2
- 2 leeks, chopped thinly
- 2 tbsp coconut or olive oil
- 1 cup mushrooms, chopped
- 1 cup asparagus, chopped
- 1 tsp sea salt
- 1 tbsp sesame seeds
- 1 tsp chilli (optional)
Method
- Heat 1 tbsp olive or coconut oil in a non-stick fry pan on medium heat.
- Sauté chopped leeks until they start to brown.
- Add chopped mushrooms and asparagus. Drizzle with extra 1 tbsp of oil, sea salt, sesame seeds and chilli. Continue to sauté for 3-4 minutes until cooked.
