Silverbeet & Broccoli Pesto

Silverbeet, Broccoli and Basil Pesto

I was experimenting in the kitchen, and put this little beauty together – it tastes amazing, and its packed full of nutrients!

Ingredients:

  • 1 cup basil leaves
  • 1 cup fresh silverbeet
  • 1 broccoli head (steamed & roughly chopped)
  • handful of shallots
  • handful of walnuts
  • 1 garlic clove
  • juice of 1/2 lemon
  • 2 tbsp olive oil
  • 1 tbsp filtered water

Method:

Add all the ingredients into a food processor, and process until it is all combined.

I then sprinkled some of my almond dukkah on top!

This recipe will make a bowl full.  If you will use it all within 1 week, store it in the fridge, if not, drizzle olive oil on top and store in the freezer.
