I have to be honest. I absolutely love pizza and I may have a slight obsession with cauliflower, so it should come as no surprise that cauliflower pizza is one of my all-time favourite healthy meals. It’s so crunchy and fulfils my pizza cravings without giving me the undesired bloat.
Here are some delicious flavour combinations I’ve been experimenting with lately. To make these pizzas, simply prepare the base according to this cauliflower pizza recipe and adjust with your preferred toppings.
Mozzarella, tomato, basil and pesto
- 1/2 a ball of mozzarella cheese, sliced
- 2 tbsp pesto
- 1 punnet baby tomatoes, sliced into halves
- handful basil leaves
Prepare your cauliflower pizza base and top with mozzarella, pesto and tomatoes. Place in the oven to cook. Once cooked, serve with fresh basil.
Thyme, mushroom and goat’s cheese
- 1 cup button mushrooms, sliced
- handful of thyme leaves
- 1 tbsp olive oil
- pinch of sea salt
- 2 tbsp goat’s cheese, crumbled
Prepare your cauliflower pizza base and top with mushrooms, goat’s cheese, thyme leaves, and olive oil. Place in the oven to cook.
Pumpkin, feta and avocado
- 1 cup pumpkin, cut into squares
- 3 tbsp feta cheese
- 1 tbsp olive oil, to finish
- sliced avocado, to finish
Prepare your cauliflower pizza base and top with pumpkin, feta and olive oil. Place in the oven to cook. Once cooked, garnish with avocado and serve.
Rocket and parmesan with balsamic glaze
- a handful of fresh rocket, to finish
- 1/4 cup parmesan cheese, grated
- 1 tbsp balsamic glaze, to drizzle
Prepare your cauliflower pizza base. Place in the oven to cook. Once cooked, garnish with the ingredients and serve.
