Spring is finally upon us down here in Australia! And that means the salad cravings are starting to return.
We’ve put together a list of our fave salads and they are all jam-packed with veggies. This means we are can meet those 5 and 2 targets and also help our gut microbiota flourish thanks to an influx of plant fibre.

10-minute Quinoa Tabouli
This tabouli recipe is a great one for meal prep as it stores beautifully. Packed with herbs, raw veg and a zingy dressing. Delicious with shredded chicken or lentils for a plant-based protein option. Get the recipe here.
Vietnamese Chicken Noodle Salad
This app recipe (pictured above) is a community favourite. It contains a mix of vermicelli noodles, veggie noodles, shredded chicken and a lime and tamari dressing – yum! Full recipe can be found in the JSHealth app.
Kale & Halloumi Salad With Tahini Dressing
Who can say no to halloumi?! I love the fresh radish in this salad and the sweet pop from the cranberries. Get the recipe here.
Chop salads are my go-to when I’m looking for a quick work lunch. This one can be made in advance, just keep the salad dressing separate and serve with your choice of protein (delicious with tuna!). Get the recipe here.
